How You Can Easily Make Delicious Classic Arctic Roll at Home

Whenever you see a classic arctic roll placed in the countertop display fridge of bakeries, you wonder how difficult its recipe would be. But that’s not the case. To make a delicious classic arctic roll at home, follow the below-given easy recipe:


Ingredients:


For the Ice Cream:

  • Eggs - 2

  • Icing sugar - 50g

  • Vanilla pod - 1 (only seeds)

  • Double cream - 150ml

For Jam:

  • Strawberries - 200g

  • Lemon juice - 1tbsp

  • Golden caster sugar - 200g

For Sponge:

  • Butter - for greasing

  • Eggs - 3

  • Golden caster sugar - 100g

  • Plain flour - 100g

  • Baking powder - ½tsp

  • Vanilla essence - ¼tsp


Ice Cream Preparation:

In a large bowl, beat the egg whites using an electric beater. Take a new bowl, add egg yolks, vanilla seeds, and icing sugar and beat well until the mixture becomes pale and billowy. Now whip the double cream in another bowl until medium peaks are formed. Then fold the egg yolks mixture into the whipped cream and further fold it into the egg whites. Pour all the mixture into a loaf tin lined with a butter paper.

Let it freeze for 2-3 hours. After this, take the ice cream tin out of the freezer. Now with the help of a spatula, shape the ice cream like an irregular sausage. By using the parchment paper, roll this mixture firmly into a cylinder having a length of about 30-35cm. Turn the parchment paper from its ends just like a cracker and let it freeze again for an hour.


Jam Preparation:

First of all, place a bowl in the refrigerator. Take a deep pan, add strawberries, sugar, and lemon juice, and keep it on high flame. Let it boil and stir from time to time. Keep it boiling for 5-7 minutes and then turn off the flame. Now pour about a teaspoon of this jam onto the cold bowl. In case it wrinkles when you push it with your finger, it means the jam is prepared.

In case it is still thin, boil it again for 3-4 minutes and check again. Once it is ready, let it cool at room temperature.


Sponge Preparation:

Set the baking oven at 180-degrees Celsius for preheating. In a bowl, beat the eggs and castor sugar using an electric beater for 3-4 minutes. Add the plain flour, baking powder, and vanilla essence into the egg’s mixture and fold very well. Now softly pour this mixture into a lined and greased 24 x 32cm Swiss roll tin. Bake it for 15-20 minutes or until the top is golden brown.

When it’s ready, let it cool slightly. Now roll up the sponge very carefully though it is still slightly warm. Don’t remove the butter paper. Now let it cool properly in this rolled-up shape.


Classic Arctic Roll Preparation:

Turn the sponge into straight shape from its rolled-up shape and evenly spread jam over it. Similarly, remove the baking sheet of the ice cream and add ice cream on the top of the jam. Now roll-up the cake. Use a new baking sheet to wrap this Arctic roll. Also, add a layer of foil around it. Freeze it for an additional half an hour. Finally, unwrap the Classic Arctic roll, slice it, and serve.
